Ever eat an entire bag of chips in one sitting and then have the energy to hike up a mountain? Yeah, neither had we. That is, until we tried Pacific Northwest Kale Chips, “the Pacific Northwest’s healthiest snack”. In April 2012, Sarah Pool and Ugyen Shola set out to provide Portlanders with a delicious way to snack on this nutritional powerhouse, and they have certainly succeeded. The (all natural, gluten-free, vegan, raw) chips are made lovingly in small batches with local and organic ingredients. The kale is dried at a low temperature, yielding a perfectly crunchy treat without compromising any of the health benefits. In true Portland fashion, a commitment to sustainability is evident; most of their ingredients are delivered by bike and the chips are packaged up in recyclable bags.
